TYPE:
The Witzenberger is a large hard cheese matured for at least 6
months.
ORIGIN:
Made in the Appenzell tradition of Switzerland.
TASTE & USE:
Expect a tangy cheese with intense flavors. Its cousins are the
Gruyere and the Fontina.
SERVING & WINE RECOMMENDATION:
The cheese will be great as a hard cheese cut into slices but
also mouthwatering good when melted and served with
young boiled potatoes and pickles. A fruity Pinotage or a full
bodied red wine like a Cabernet Sauvignon should go well
with the Witzenberger.
SIZE:
A whole round usually weighs 5 – 7 Kg so we recommend to
either order half a cheese or in vacuum packed retail size
wedges.
