At Kimilili we dedicate our efforts to making hand crafted farmhouse cheeses in the French and Swiss cheesemaking tradition. As a "Fermier" cheese maker we rear our own cows and exclusively process our own milk. We do this in order to be in control of the milk quality to ensure that only the best raw materials are used in our
cheeses. We use natural farming practices to establish and improve our pastures. The animals are exclusively raised on pasture and only get hay and minerals as supplements. We do not use chemical fertilizers, pesticides, herbicides or any commercial dairy feed on the farm.
